Colourful Kale Salad

This delicious and fresh salad makes me wonder how I used to dislike kale!

Paleo, Vegan, plus dairy, egg, soy, gluten, wheat and refined sugar free


  • Kale – pull leaves off stems
  • Beetroot grated
  • Avocado sliced
  • Mandarins segmented
  • Pinenuts
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Pinch of Celtic or Himalayan salt


  1. Put kale in a bowl and massage with olive oil and lemon juice, until kale is tender
  2. Add the rest of the ingredients and toss if desired
  3. Serve as a side salad to accompany a nutritious protein
