Lest we forget

Vegan and free of wheat, dairy, egg, soy and refined sugar ~ gluten free, nut free and Paleo options

Makes 16 biscuits

Ingredients:

*If you are allergic to wheat because wheat-free oats are not processed on the same machinery as other gluten-containing grains.  Substitute with ground nuts of your choice (e.g. almonds) for a Paleo version.

Method:

  1. Preheat oven to 160 degrees fan-bake
  2. Line a baking tray with baking paper
  3. In a large bowl combine the dry ingredients (except baking soda)
  4. Add the wet ingredients (except hot water)
  5. Stir in baking soda dissolved in hot water
  6. Mix until combined
  7. Roll into 16 balls and flatten with the back of a fork
  8. Bake for 10-12 minutes or until golden brown
  9. Enjoy with a cup of tea
