Banana Choc Chip Loaf

This healthy banana loaf is the perfect lunch box filler!

Paleo, soy, nut, gluten, wheat and refined sugar free ~ dairy free without butter to serve

Ingredients:
• 3 ripe, mashed bananas
• 3 eggs
• 3 tablespoons honey or maple syrup
• 1 tablespoon vanilla extract
• 1 teaspoon baking soda (dissolved in almond or coconut milk)
• Pinch pink Himalayan salt
• 1/3 cup coconut flour
• 3 heaped tablespoons dark choc chips

Method:
1. Preheat oven to 160 degrees fan bake
2. Prepare loaf tin with baking paper or grease generously with butter or coconut oil
3. Mash bananas in a large bowl until smooth
4. Add eggs, honey/maple syrup and vanilla to the banana, mix well
5. Add baking soda, salt, coconut flour and choc chips, mix until combined
6. Pour into the loaf tin and bake for 55-60 minutes, or until a a skewer comes out clean
7. Serve warm with butter
