Lemon Cheesecake Protein Balls

Paleo, Vegan and dairy, egg and soy free (depending on protein powder), free of gluten, wheat and refined sugar

Every week I create a batch of bliss balls for my Nutrition class (and myself!).  It gives me the opportunity to dream up a new winning combination.  Introducing my Lemon Cheesecake Protein Balls…

Ingredients:

  • 100g vanilla protein powder
  • 50g cashews
  • 50g macadamias
  • 50g desiccated coconut
  • 50g melted coconut oil
  • 50g coconut butter
  • 50g cashew butter
  • Juice and zest from 1 lemon
  • 1 tablespoon vanilla extract
  • Pinch of salt

Method:

  1. Mix all ingredients in a food processor until combined.
  2. Form into balls and roll in desiccated coconut.  Store in the fridge.
