Low Carb Lunch Bowl

Or Breakfast Bowl, whatever you like!

Gluten, wheat, soy and nut free

Serves 1

Ingredients:

  • 2 scrambled eggs cooked in butter, with parmesan on top
  • 1/2 can organic (gluten-free) baked beans, warmed
  • 1/4 sliced avocado (would’ve had half if I wasn’t saving the rest for dinner!)
  • Sprinkle of feta
  • Handful of rocket
  • 1 tablespoon olive oil
  • Salt

Method:

  1. Throw together in a bowl and enjoy!
