Protein Powder Pancakes

You can have your pancakes and eat them too!

Paleo, plus dairy, soy, gluten, wheat and refined sugar free (if you don’t sprinkle icing sugar on top!)

Ingredients (serves 2):

  • 2 scoops vanilla protein powder (collagen powder can also be added)
  • 2 ripe, mashed bananas
  • 2 eggs
  • 1/4 teaspoon cinnamon
  • Coconut oil or butter for cooking


  1. Mix together protein powder, bananas, eggs and cinnamon in a bowl
  2. Heat a bit of coconut oil or butter in a pan and cook each pancake until golden brown on each side
  3. Serve with fresh strawberries, blueberries, cherries, coconut yoghurt, maple syrup, and a sneaky sprinkle of icing sugar if desired
