Snack Attack

This is an example of what I’d have as a SUBSTANTIAL SNACK or MINI MEAL like a small breakfast or lunch.

I wouldn’t usually have this for morning tea because my Berry Protein Smoothie keeps me going for 4+ hours.  But I’d have it as a light lunch or additional snack in the afternoon if I have sports or I’m doing something physical in the evening.  When I’d be having a late dinner at 8/8:30.

Paleo, vegan and dairy free (use coconut or almond yoghurt instead of Greek), plus egg, soy, gluten, wheat and refined sugar free (depending on granola)

Ingredients:

  • Handful of fresh cherries
  • Couple of tablespoons granola (I use Paleo, grain-free with lots of nuts and seeds)
  • Pottle of unsweetened Greek yoghurt (coconut or almond yoghurt if dairy free or vegan)
  • Tablespoon almond butter
  • Sprinkle of desiccated coconut

Method:

  1. Start with cherries on the bottom, add granola on top, yoghurt on the side, almond butter on top of the yoghurt, and coconut to finish it off.
