PB & Choc Banana Pops

Vegan and free of gluten, wheat, dairy, egg, soy and refined sugar (depending on chocolate)

This is my GO-TO SNACK/DESSERT in summer.  The perfect way to end a hot day and satisfy your ice-cream cravings!

Ingredients:

  • Peeled bananas
  • Crunchy peanut butter
  • Buckwheat groats
  • Dark chocolate

Method:

  1. Cut bananas in half and insert a popsicle stick the centre
  2. Coat bananas in peanut butter
  3. Roll peanut butter coated bananas in buckwheat groats (adds extra crunch)
  4. Melt dark chocolate and coat the bananas in chocolate
  5. Place the choc coated bananas on a tray lined with baking paper and sprinkle a pinch of Celtic/Himalayan salt over the top
  6. Allow to set in the freezer for at least 3 hours or overnight.  Let them sit at room temperature for at least 5 minutes before serving
