Vegan and free of gluten, wheat, dairy, egg, soy and refined sugar (depending on chocolate)
This is my GO-TO SNACK/DESSERT in summer. The perfect way to end a hot day and satisfy your ice-cream cravings!
Ingredients:
- Peeled bananas
- Crunchy peanut butter
- Buckwheat groats
- Dark chocolate
Method:
- Cut bananas in half and insert a popsicle stick the centre
- Coat bananas in peanut butter
- Roll peanut butter coated bananas in buckwheat groats (adds extra crunch)
- Melt dark chocolate and coat the bananas in chocolate
- Place the choc coated bananas on a tray lined with baking paper and sprinkle a pinch of Celtic/Himalayan salt over the top
- Allow to set in the freezer for at least 3 hours or overnight. Let them sit at room temperature for at least 5 minutes before serving
